Weeknight Red Beans and Rice

Makes 4 Servings

  • Ingredients
    1 Tbsp vegetable oil
    1/2 cup onion, chopped
    1/2 cup chopped celery
    1/2 cup green bell pepper, chopped
    2 cans (15 oz.) red kidney beans, rinsed and drained
    8 oz sliced smoked sausage
    1 can (8 oz.) tomato sauce
    1 Tbsp Worcestershire sauce
    1/2 tsp dried oregano leaves
    1 pkg Mahatma® Red Beans and Rice Mix
    3 1/4 cups water
  • Directions
    Heat oil over medium heat in a Dutch oven or large heavy saucepan.  Add onions, celery and bell peppers and saute 2 minutes.  Add beans, sausage, tomato sauce, Worcestershire sauce, oregano, rice mix and water.  Stir and bring to a boil. Reduce heat, cover and simmer 20 minutes, stirring occasionally.
