Saffron Fried Rice

  • Ingredients
    2 pkgs Mahatma® Saffron Yellow or Spicy Yellow Rice mix
    2 eggs
    salt and ground black pepper, to taste
    1 pkg (12 oz.) Chipotle Monterey Jack cheese chicken sausage, chopped
    2 Tbsps olive oil, divided
    1 onion, chopped
    1 red bell pepper, chopped
    1 Tbsp fresh ginger root, grated
    1 cup frozen peas, thawed
    1 cup green onion, thinly sliced and divided
    2 tsps low sodium soy sauce
    chili sauce, optional
  • Directions
    Prepare rice according to package directions.  Set aside to cool.

    Lightly beat eggs with salt and pepper.  In a large skillet heat ½ tablespoon oil over medium heat; add eggs and scramble until just set.  Remove eggs; set aside; wipe pan clean.  Add remaining oil to skillet.  Increase heat to medium-high.  Sauté sausage, onion, bell pepper and ginger until vegetables are crisp tender.  Add rice, peas, 1/2 cup green onion, soy sauce and reserved egg.  Continue to stir-fry until all ingredients are incorporated and heated through. 

    Serve topped with remaining green onions and chili sauce.
