Shrimp Riders

  • Ingredients
    1 pkg Mahatma® Saffron Yellow or Spicy Yellow Rice mix
    1 each garlic, minced
    1 Tbsp parsley, chopped
    1 tsp dried oregano leaves
    1/2 tsp salt
    2 Tbsps lemon juice
    1/2 cup butter, melted
    1 oz dark rum, optional
    18 large shrimp
  • Directions
    Preheat oven to 400º F.  Prepare rice according to package directions.

    In a small bowl combine garlic, parsley, oregano, salt, lemon juice, butter and rum.  Set aside.

    Peel shrimp, leaving last segment and tail attached.  Butterfly and devein, flattening shrimp slightly.  Arrange shrimp on a foil lined baking pan.  Combine hot cooked rice with reserved mixture.  Using a small scoop or spoon, place about 1 tablespoon of rice mixture on the flattened end of shrimp.  Curl shrimp tail over rice to secure stuffing. 

    Bake 8-10 minutes, until shrimp are pink and cooked through.
