Pine Nut Pilaf

  • Ingredients
    2 Tbsps butter
    1/4 cup onion, chopped
    1/4 cup celery, chopped
    1 cup Mahatma® White Rice
    2 cups beef broth
    2 bay leaves
    1/4 cup pine nuts
    1/4 cup parsley, chopped
  • Directions
    In a medium saucepan, melt margarine. Sauté onions and celery until tender. Add rice and stir until coated with margarine. Add broth and bay leaves. Bring to a boil. Cover, reduce heat to simmer. Simmer for 20-minutes. Fold in pine nuts and parsley. Remove bay leaves before serving.
