Creamy Bay Scallops over Saffron Rice

Makes 6 to 8 Servings

  • Ingredients
    2 pkgs Mahatma® Saffron Yellow Rice mix
    1 Tbsp olive oil
    1 each minced garlic
    1 shallot, minced
    1 cup dry white wine
    1 cup seafood stock
    1 lb fresh bay scallops
    1/2 cup red bell pepper, diced
    1/2 cup green bell pepper, diced
    1/2 cup sour cream
    1/4 cup flat leaf parsley, chopped
  • Directions
    Prepare rice mix per package directions and keep warm. Heat a large heavy bottomed sauté pan over medium-high heat. Add olive oil and sauté garlic and shallot for one minute. Increase heat to high and add stock and wine. Bring to a boil.  Continue to boil until liquid is reduced to ¾ cup. Reduce heat to low and add bay scallops and bell peppers. Simmer 5 minutes, or just until scallops are no longer translucent. Remove from heat and stir in sour cream and parsley. Serve scallop mixture over Saffron Yellow rice.
