Black Beans and Rice Skillet Dinner

Makes 6 Servings

  • Ingredients
    1 Tbsp olive oil
    1/2 cup onion, chopped
    1/2 cup celery, chopped
    1/2 cup carrot, chopped
    1 can (14 1/2 oz.) tomatoes
    1 pkg (8 oz.) Mahatma® Black Beans and Rice Mix
    1 can (14 1/2 oz.) chicken broth
    1/2 cup water
    1 pkg (8 oz.) cream cheese, softened
    1 cup diced ham
    1/2 cup shredded cheddar cheese
    1/4 cup green onion, chopped
  • Directions
    In a large skillet, heat olive oil. Sauté onions, celery and carrots until tender crisp. Add tomatoes, black beans and rice, chicken broth and water. Bring to a boil. Simmer 20 minutes. Fold in softened cream cheese. Add ham and cheese. Top with green onions.
